Recipes - Cold Puddings - Custard Slices
Ingredients:
1 pkt cream crackers
2 ml salt
1 litre milk
100 ml cold water
250 ml sugar
3 eggs (separated)
60 ml margerine
5 ml vanilla escence
120 ml cake flour
500 ml icing sugar
100 ml cornflour
approx 40 ml boiling water
10 ml custard powder
Method:
Arrange cream crackers in rows on the base of a greased dish.
Make sure the division lines all face the same way. Bring the milk to the boil,
add sugar and margarine and stir well until melted. Remove from heat.
Mix well, cake flour, cornflour, custard powder, salt and cold water.
Add egg yolks and beat well. Beat some of the milk mixture gradually into the custard mixture.
Add this to the rest of the milk in the saucepan. Stir over low heat until it thickens.
Remove from heat and stir in the vanilla essence. Beat egg whites until stiff and
fold lightly into the custard mixture. Pour over the crackers.
Cover with the remaining crackers, making sure that the division lines match those of the base.
Cool then refrigerate until completely cold.
Mix icing sugar and boiling water to a spreading consistency and spread it evenly.
Cut slices along the division lines.
